Baharat – Arab Spice Blend

This delicious spice blend or curry, is a key component in Machboos and other Arabic Dishes.  It has its origin in India and is very similar to a Garam Masala Indian Curry Blend.

2 tbsp fresh ground black pepper
2 tbsp paprika
2 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground cloves
1 tsp nutmeg
1 tsp ground cinnamon
1/2 tsp ground cardamom

This recipe makes 10.5 Tbsp, more than the amount needed for Machboos.  However, if you are like me, you will find yourself using it all the time.  I make fried potatoes with a light dusting of this or other curries for breakfast with eggs and it is delicious.  Keep the remainder in a small airtight glass jar in your spice cabinet.
